Pepper Jack... or Jalapino Cheddar... but pepper jack is the better of the two. at work tonight i made myself a ghetto-fied pepper jack onion ring... i cut a slice of pepper jack into strips, then put the strips acount the inside of a ring of onion, then i put that in the beer batter and then put it in the fryer... its was great, especially dipped in stuff, i cut it up so i could try it plain, dipped in barbaque sause, and dipped in our southwest ranch dressing (1 part ranch dressong mixed with 1 part medium salsa)...-drools-
